Q: Why do your juices contain Xanthan Gum?
A: Xanthan gum is a natural polysaccharide that is not petroleum based, non-synthetic, and non-toxic. It is made from a tiny microorganism called Xanthomonas campestris and is a natural carbohydrate. Xanthan Gum is produced primarily from cellulose from corn or cabbage and it functions similarly to gelatin in recipes with regards to stabilizing suspensions, but it is completely vegan and great for cooking and baking for persons with food allergies and restrictions, especially for those who are omitting dairy, eggs and soy from their diet. We chose to use Xanthan Gum for our friends with Celiac Disease so that they could enjoy our juices with a gluten-free stabilizer, rather than other stabilizers that contain gluten. Xanthan Gum also works as an emulsifier so that our juices don't settle out.
