Slow-cooker Beef Bourguignon

Ingredients

  • 2 cups Pomegranate & Berries with Resveratrol Juice
  • 3 pounds beef roast, or beef stew meat
  • 6 slices bacon—no need to cook
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 cup baby carrots
  • 1 cup mushrooms
  • 4 garlic cloves, chopped
  • 1 tablespoon Herbs de Provence
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon tomato paste
  • splash of wine vinegar

Resveratrol Glaze for Pork Roast

Mix all ingredients together in a small bowl. Use enough sugar so the glaze is the thickness of BBQ sauce. Using a basting brush, coat roast pork or pork chops, as desired, before cooking. If using as a glaze for a roast, save enough to re-baste throughout baking time.

Acai Brownies

  • One box of your favorite low-fat brownie mix

Directions

Preheat oven to 350 degrees. Add all the Acai Berry Juice
to the dry mix, do not use any other wet ingredients. Mix well. Pour into
a greased baking pan. Cook for about 25-30 minutes, until a toothpick
comes out dry when inserted in the center of the pan. Allow the brownies
to cool before serving. Top with whipping cream or similar, if desired.
The texture will be more like a sticky cake, depending on your baking time.

Slow-cooker Beef Bourguignon

Ingredients

  • 2 cups Resveratrol Juice
  • 3 pounds beef roast, or beef stew meat
  • 6 slices bacon—no need to cook
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 cup baby carrots
  • 1 cup mushrooms
  • 4 garlic cloves, chopped
  • 1 tablespoon Herbs de Provence
  • 1 teaspoon kosher salt

  • 1 tablespoon tomato paste
  • splash of wine vinegar

Directions

In the bottom of the slow cooker put the olive oil, 3 slices of bacon,the onion and the garlic.
Place the beef on top and sprinkle on the herbs, salt and pepper. Toss the meat in the mixture,
so that the flavors get onto all sides of the beef. Add the tomato paste. Lay 3 slices of bacon on
top of the meat. Toss in the carrots and mushrooms. Pour the Resveratrol Juice over the top with a
splash of vinegar (to balance out the sweetness of the juice & add just a touch of acidity).
Cover and let cook on low for 8-9 hours, high for 4-5, or until meat has reached desired tenderness.
If you are using a roast, you may want to flip the meat about an hour before serving so more liquid is
absorbed into the meat.

If you prefer, you can brown the meat in the olive oil, onion, garlic before placing it into the slow cooker.

Cacao Pudding Cake

Ingredients

  • One- 3.5 oz container of Dark Chocolate Cacao Pudding
  • 2.5 ounces of semi-sweet baking chocolate (5 squares)
  • 3 tablespoons cold brewed coffee
  • 6 eggs, separated
  • 1/2 cup sugar
  • Pinch of salt
  • 3 tablespoons cocoa powder
  • 2 cups heavy cream (can be substituted with a light dessert topping)

Directions

Preheat oven to 350 degrees.

In the microwave, slowly melt the chocolate and the coffee
(50% power for 2-4 minutes). Stir until smooth. After chocolate and
coffee mixture is melted and whisked until smooth, add the pudding
to the mix and whisk again until smooth. Do not warm the pudding.

Butter a 10 x 15-inch jellyroll pan. Line with waxed paper,
leaving enough paper so it overlaps at the ends of the pan. Butter
and flour the paper.

Beat the egg yolks until fluffy. Add the sugar gradually
and beat until very thick. Stir in the chocolate mixture and salt.
Beat the egg whites until stiff. Carefully fold egg whites into the
chocolate mixture. Spread evenly in the prepared pan.

Bake the cake for 12 to 15 minutes, until it springs back
when touched in the center. Remove from the oven and place on a rack.
Cover the cake with plastic wrap and a damp kitchen towel and let cool
for 1 hour.

Remove the towel and plastic and sprinkle the cake with the cocoa.

Whip the cream until stiff. Spread half of it over the cake.
Carefully roll the cake from one long side, lifting the parchment paper
to get it started. Place the roll seam-side down on a serving tray. Sprinkle
with cocoa and cover the cake with the remaining cream. Sprinkle the iced
cake lightly with cocoa powder, if desired, and chill until ready to serve.
